I don’t always have enough time to make myself a full lunch. Life is busy, and, as much as I love Larabars, I have found myself eating one as a meal much too often. About a year ago, I decided to create some fast (but delicious) ways to concoct a meal, and this burrito is one of my favorites.
So, what’s in this burrito? Well, there’s rice, beans, cheese, bell pepper, sour cream, corn, and salsa all wrapped in a delicious flour tortilla! Oh, and it has 8 grams of protein! Okay, I know what you’re thinking: how is that only three ingredients? My secret is a frozen dish that is retailed at just $1 at stores near me. For more details, scroll down!
The Ingredients
Flour Tortillas

For the base, all you need is two or three small flour tortillas (or 1 or 2 large ones). Of course, if you prefer corn tortillas, that would work too, but I like flour ones for this recipe.
Eat2Live Vegetable Burrito Bowl Frozen Dish

I use this frozen dish as the main filling of the burrito. It contains rice, sour cream, red beans, black beans, green bell peppers, cheese, corn, and lots of seasoning. The dish is only 290 calories, but provides you with 8 grams of protein. You can find information on the product at this website. Of course, if you can’t find this specific frozen dish, there are other inexpensive ones that will work as well. Here are some ideas:

- Smart Ones Santa Fe Rice & Beans (I’ve tried this one before)
- Marie Callender Cheesy Chipotle Rice & Beans Bowl (I haven’t tried this one but I usually like Marie Callender meals)
Salsa!

The final ingredient in this burrito is salsa. My favorite brand is Willy’s Fresh Salsa and you can find the website here. I’ve only used mild for this burrito, but I’m sure a spicy salsa would taste good as well. If you want to skip salsa altogether, I recommend purchasing some pico de gallo, but it goes bad quicker.
The Process
Step One: Cook the frozen rice and bean dish according to the package’s instructions. Then, transfer the rice mixture to the center of the tortilla(s). If you want to use up all of the rice mixture, evenly divide contents between 3 small or 2 large tortillas. If you want to save some rice to eat on the side, only use 2 small or 1 large tortilla.

Step Two: Scoop preferred amount of salsa on top of rice mixture that is inside the tortilla(s).

Step Three: Carefully roll the tortilla(s) into the shape of a burrito. Now you’re done! If you have some rice mixture remaining, serve it on the side.

- a few spoonfuls salsa
